Perfect Duck Breast in Air Fryer

Roasting duck breast in an air fryer is not only one of the simplest but perhaps the most perfect methods of preparing this premium meat.

Compared to a traditional oven, you can achieve a more tender, juicier result in the air fryer, and the preparation is extremely simple.

Air Fryer vs. Convection Oven

It’s important to note that this recipe details the preparation of duck breast in an air fryer, a standalone device typically found on the kitchen counter.

Skillet Technique

The preparation of a perfect duck breast in an air fryer starts in a traditional skillet. This step is necessary to fully render the duck fat and make the skin crispy.


For the best results, score the duck breast skin every 1 inch or 2 cm, being careful not to cut into the meat. Place the duck breast skin-side down in a cold skillet and start frying over high heat.

Fry the duck breast in the skillet for 6 minutes, then transfer it to the air fryer. The “secret” to perfect duck breast lies in the cooking temperature and time.


Cooking Time and Temperature

When using an air fryer, the two most important factors are cooking time and temperature. This applies not only to the air fryer but also to the initial skillet cooking.

  • Place the duck breast in a cold skillet. Start frying over high heat, and when it starts to sizzle, reduce to medium or just above. Fry skin-side down for 6 minutes, draining the rendered fat every 1-2 minutes.
  • With the duck breast still in the skillet, fry skin-side up for 30 seconds to develop a flavorful crust.
  • Finally, roast the duck breast in the preheated air fryer at 320 F (160 C) for 10 minutes, skin-side up.

This results in a medium-pink duck breast.

You may need to adjust the time by 1 minute more or less for the perfect result, depending on your air fryer.

If you prefer it less done, reduce the air fryer time by 2 minutes.

If you prefer it more done, increase the air fryer time by 2-5 minutes.

  • To roast the duck breast, first cut into the skin of the duck breast about 2 cm apart, without cutting into the flesh. Salt the skin side and salt and pepper the meat side.

  • Place the duck breast skin side down in a cold pan. Turn on the flame underneath over high heat.

  • Cook in the pan for a total of 6 minutes. When it starts to sizzle, turn the heat to medium or slightly above. Meanwhile, drain the rendered fat into a separate bowl every 1-2 minutes.
  • While the duck breast is cooking in the pan, preheat the air fryer.

  • After 6 minutes, turn the breast over in the pan. Cook for just 30 seconds.

  • Transfer the breast, skin side up, to the basket of the air fryer. Bake at 320 F (160 C) for 10 minutes.

  • When done, remove the duck breast and let rest for 5 minutes. Serve whole or sliced immediately.
