If necessary, remove the membrane from the ribs and cut them into portions. While you’re prepping, preheat your air fryer.
In a small bowl, mix together the lard or oil, minced garlic, salt, and pepper to make the marinade.While you can use oil, using high-quality pork lard will give your ribs a richer, more authentic flavor. Rub the marinade all over the ribs, making sure to massage it in well.
Place the ribs in the air fryer basket, pour about 1/4 cup of water under the basket, and cook at 300°F (150°C) for 30 minutes.
Drain the juices from the air fryer into a bowl. Flip the ribs, baste them with a couple of tablespoons of the collected juices, and cook for another 20 minutes at 340°F (170°C).
While the ribs are cooking, peel and dice the potatoes.
Place the potatoes in a pot of salted water and bring to a boil. Cook for about 15 minutes, or until the potatoes are tender.
Drain the potatoes and let them sit for a minute or two to release any excess steam. Then mash them and stir in the butter until smooth. Season with salt to taste.
Flip the ribs once more and drain off any excess fat. Brush or drizzle a bit of the rendered fat over the ribs, then cook for another 20 minutes at 340°F (170°C).
Serve the garlic pork ribs hot with the creamy mashed potatoes. Enjoy!
