Begin with the setup for traditional breading. Organize flour, beaten egg, and breadcrumbs into separate plates or bowls. Season the egg well with salt and pepper.
Slice the turkey breast into roughly 1.5 cm (1/2 inch) slices. Carefully tenderize under several layers of plastic wrap to the desired thickness. Lightly coat the slices with your chosen fat, and season with salt and pepper.
Bread the turkey slices by first coating in flour, then dipping in the egg, and lastly covering in breadcrumbs. Be sure to shake off excess and let any extra drip off between each step to maintain a light, even coating.
Preheat the air fryer. Cook the breaded turkey slices at 355 F (180 C) for 15 minutes, turning once at the halfway mark and again a couple of minutes before they're done.
